Ingredients:

  • 1 whole chicken (cut into 8 parts)
  • 2 cups of coconut milk
  • 1 1/2 cups of rice (washed and drained)
  • 2 pandan leaves (tied into knots)
  • 2 turmeric leaves (sliced)
  • 2 lemongrass (bruised)
  • 1 ginger (bruised)
  • Salt and sugar to taste
  • Oil for frying

Instructions:

For the Ayam Berempah:

  1. Grind the following into a paste: 10 dried chili, 6 shallot onions, 4 garlic cloves, 1 inch ginger, 1 inch turmeric, 1 tablespoon of coriander seeds, and 1 tablespoon of cumin seeds).
  2. In a wok, heat up oil and fry the spice paste until fragrant.
  3. Add in the chicken and fry until lightly browned on each side.
  4. Add in the coconut milk, lemongrass, ginger, turmeric leaves, salt and sugar to taste.
  5. Cook until the chicken is tender and the gravy is thick.

For the Nasi Lemak:

  1. In a rice cooker, add in the washed rice, pandan leaves, and salt to taste.
  2. When the rice is cooked, fluff it up with a fork and add in the sliced turmeric leaves.

Lastly, we need to assemble our dish. In a plate, add in the nasi lemak, fried chicken, and top it off with a generous amount of gravy. YUM! Just looking at this dish makes my mouth water. So, go ahead and give this recipe a try. It's easy to make and sure to impress!
